Ingredients

For the Salmon Burgers

  • 500g fresh salmon fillets, skin removed
  • 1 tbsp olive oil
  • 1 small onion, very finely chopped
  • 1 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh dill, finely chopped
  • Zest of 1 lemon
  • 1 tbsp lemon juice
  • 75g fresh white breadcrumbs
  • 1 medium free-range egg, beaten
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper

For Frying

  • 2 tbsp sunflower oil

To Serve

  • 4 brioche burger buns, lightly toasted
  • Lettuce leaves
  • Sliced tomato
  • Red onion slices
  • 2–3 tbsp mayonnaise or tartare sauce

How to Make Mary Berry Salmon Burgers

  • Prepare the salmon: Cut the salmon into chunks. Place half in a food processor and pulse briefly until finely chopped but not smooth. Finely chop the remaining half by hand to keep some texture.
  • Mix the filling: In a large bowl, combine the chopped salmon, onion, parsley, dill, lemon zest, lemon juice, breadcrumbs, beaten egg, salt and pepper. Mix gently until just combined.
  • Shape the burgers: Divide the mixture into four equal portions and shape into thick patties. Place on a plate, cover and chill in the refrigerator for 15 minutes to firm up.
  • Cook the burgers: Heat the sunflower oil in a large non-stick frying pan over medium heat. Cook the burgers for 4–5 minutes on each side until golden brown and cooked through.
  • Assemble and serve: Spread mayonnaise or tartare sauce over the toasted buns. Add lettuce, tomato and red onion, then place the hot salmon burger on top. Serve immediately.

Tips

Why are my salmon burgers falling apart?

Make sure the mixture is chilled before cooking and avoid over-processing the salmon. The texture should remain slightly coarse rather than smooth.

Can I use tinned salmon?

Yes, but drain it thoroughly and remove any skin or bones. The texture will be slightly softer than when using fresh salmon.

How do I know when they are cooked?

The burgers should feel firm to the touch and be opaque throughout. Avoid overcooking as salmon can quickly become dry.

Can I cook them in the oven?

Yes. Bake at 200°C or 180°C fan for 12 to 15 minutes, turning halfway, until golden and cooked through.

FAQs

Can I make salmon burgers ahead of time?

What can I use instead of breadcrumbs?

You can use crushed crackers or panko breadcrumbs for a slightly different texture.

Can I grill salmon burgers instead of frying?

Yes, brush lightly with oil and grill over medium heat for about 4 to 5 minutes per side.

Are salmon burgers healthy?

They are high in protein and omega-3 fatty acids, making them a nutritious meal option when served with fresh vegetables.
